- 2-3 bell peppers (mixed colors) sliced
- 1-2 large white onion, sliced
- 2 tbsp olive oil or butter
- 1-2 tbsp fajita seasoning (or a mix of chili powder, cumin, garlic powder, and pepper)
- Juice of 1-2 limes
- Flour or corn tortillas
- Optional: cilantro, sour cream, guacamole, shredded cheese
Instructions:
1. Prepare the Meat: Soak the deboned, sliced rabbit in water with a little chicken bouillon or in your favorite marinade for at least an hour to tenderize and add flavor.
2. Season: Toss the rabbit strips with olive oil and your chosen fajitas seasoning.
3. Cook: Heat a skillet or grill to high. add the rabbit and sear until cooked through (about 4-6 minutes).
4. Sauté Veggies: remove the meat, add a little more oil if needed, and sear the peppers and onions until slightly charred, but still crisp-tender.
5. Finish: Add the meat back to the pan, squeeze fresh lime juice over everything, and stir to combine.
6. Serve: Serve immediately on warm tortillas with your favorite toppings.
