Zucchini Rabbit Lasagna

Ingredients:

2 lbs. ground rabbit meat

1 Lg. Classico Sauce or Ragu

3 cups shredded Mozzarella Cheese

16 oz. Cottage Cheese

1 Egg

2 Zucchini spiral cut into noodles

Choice of Spices: pepper, Everything Bagel, Garlic Parmesan

Opt. green onion, corn, olives

Preheat oven to 350 degrees

In a skillet, spice and brown ground rabbit meat and green onions. After meat has browned, drain juices, add sauce and any other optional ingredients, set to simmer. 

In a medium bowl, mix together: mozzarella cheese, cottage cheese, egg and pepper. 

In a 9X13 Pyrex dish, layer 1/2 sauce mix, 1/2 zucchini noodles, cheese mix, remaining zucchini noodles, and remaining sauce mix. Top with cheese.

Cover loosely with foil and bake for 1- 1 1/2 hours.

Add a side salad and enjoy a healthy, lean, delicious lasagna dish.
