Ground Rabbit Meatloaf

              Ground Rabbit Meatloaf by Katie Cope

 

Preheat oven to 350 degrees

Slightly oil 2 quart Pyrex baking dish

 

In a large bowl, mix together:

2 lbs. ground rabbit meat

1/2 red union, diced

1 can whole corn

1 can peas

1 cup milk

1 heaping cup bread crumbs

salt/pepper or favorite seasonings

 

Topping:

2 Tbls. brown sugar

2 Tbls. mustard

1/3 cup ketchup

 

Place loaf in slightly oiled 2 quart Pyrex baking dish

Bake at 350 degrees 1-1/2 hours
